Mango Coconut Smoothie

A light, fruity concoction inspired by the Indian drink mango lassi.


Ahh, India, the world of spicy food, yoga, Bollywood, and, of course, mangoes. If you're Indian like me, you've probably heard of (and tasted) mango lassi at some point in your life. Something about the sweet, fruity flavor of mangoes combined with the tang and slight sourness of dahi (Indian yogurt) creates a cooling, refreshing beverage, perfect for hot summer days.


So my family was not at all surprised when I presented them with this recipe one summer morning. I'm usually the first to wake up in my family, and I usually make breakfast, one of my favorite go-to's being a smoothie. The coconut in this smoothie may be a little controversial, as I find whenever I say the word "coconut", I'm either met with a series of oohs and ahhs or a bundle of sighs groans, and eye-rolling. I'm not exactly a fan of coconut, but when I tasted this smoothie, I immediately loved it! So even if you're not big on coconut, try this. It might just change your mind.


I wanted to use fresh mango to flavor this smoothie, but let's be real: who has fresh mangoes lying around all the time? If mangoes are in season, feel free to use them, but canned mango pulp works just as well.


This smoothie consists primarily of liquid ingredients making it more of a beverage than a full breakfast, so I would advise you to eat it with some bran flakes or cereal for a more complete meal.


Well, enough of my rambling, let's get to the recipe already!



 

Mango Coconut Smoothie

Ingredients:

1/2 cup dahi(yogurt)

1/4 coconut milk or water(you could also use regular water)

1/2 cup milk

4-5 tablespoons mango pulp

milk powder or vanilla protein powder(optional)

1 spoon sugar/maple syrup/honey(optional)


toppings: unsweetened shredded coconut, bran cereal(granola works great)


Directions:

Mix all the ingredients in a blender or large mixing bowl and blend/stir to combine. Pour into glasses to serve, top with shredded coconut and some bran flakes/cereal. Enjoy!
