The ULTIMATE High Protein Sandwich

I guess I've been thinking about something like this for a while, a burger with an egg cooked on top for an ultimate protein-packed meal.


The final straw, I would say, was probably watching a Tasty video yesterday about vegan lunch meal preps. One of the recipes there was a quinoa salad with avocado dressing. We didn't have quinoa, but we had quinoa veggie burgers from Trader Joe's(which taste AMAZING by the way), so I figured why not put my own twist on it?


I also had gymnastics practice yesterday, which is going to be my last in-person class for a while, because they're shutting down again. Sigh. Anyways, I woke up this morning feeling super sore, and wanted something high in protein to give me energy and help rebuild muscle. And this was a great idea, simple and easy to make but delicious and nutritious all the same.


I have a checklist when it comes to sandwiches of any kind:

Sauce: There needs to be some kind of moisture, or sauce to add flavor and make the bread less dry; in this case the avocado. If you don't have/like avocados, feel free to use mayo, cream cheese, anything of your choice. (But I'm telling you, it tastes so much better this way!)

Filling: This is what I like to call the "meat" of the sandwich. It needs to have some kind of flavor, and usually the majority of the nutrients as well. In this case, that'd be the burger.

Extra: Most sandwiches have more than one thing in the middle, and so does this one! The egg on top of the burger adds some extra protein and an interesting texture.


So, let's get on to making this!


Step 1: Toast your bread.



Sandwiches taste the best when the bread is toasted, so there's a satisfying crunch when you dig in. Use your favorite bread; I used sourdough, and cut it in half because it wouldn't fit in the toaster, haha. You can also do this on pan over medium heat.



Step 2: Mash the avocado.



This one's pretty straightforward: cut an avocado, place half on one slice of bread, take a fork, and pretend it's the face of your nemesis.


Step 3: Cook your burger.



Again, pretty straightforward. Take your burger of choice and cook it on a pan. If you're feeling extra The secret to a well cooked burger? Patience. Keep it on medium heat and just wait. Afterwards, slide it on top of the avocado.


Step 4: The elusive fried egg.



Crack the egg onto a lightly oiled pan(shown above) and wait for 1-2 minutes. When it seems to be solidifying, take your spatula, slide it carefully underneath the egg, and flip it quickly. I was always scared that the egg yolk would just splat onto the pan to the other side, but as long as you do it quickly, you'll be left with a gel-like yolk encased in egg white on all sides. Once that's done, plop it(gently) atop the burger.


Step 5: Sandwich time!



Now, either dig in and enjoy, or, mash the remaining half of avocado on another bread slice, put it on top of the egg and it's sandwich time!
