Avocado Eggs

A fun, delicious, and cool-looking way to eat an egg.
Lately, I've been obsessed with cooking eggs. I've tried so many different methods: poaching, eggs in a basket(check that out on my other post), sunny side up(which I'm not very good at), and scrambled eggs. I even tried cooking an egg in the microwave!(It was delicious BTW.)

So, when I watched a video of Tasty making avocado eggs, I knew I had to try it. It's surprisingly easy, and, to me, looks pretty good too. The taste is pretty interesting, since it's a funky combination, but you should try it nonetheless.
The actual recipe is simple: cut an avocado in half, crack in an egg, sprinkle on some salt and your favorite toppings, and bake it in the oven. But here is the written recipe, just in case:)
This weird but delicious recipe is simple as well as versatile.

Serves: 1-2, depending on size of avocado
Ingredients:
1 avocado, cut in half and seed removed(keep the skin on)
2 eggs(if your avocado is smaller like mine, 1 egg)
Some topping(optional)- cheese, chopped tomatoes, etc.
pinch of salt
pinch of pepper
Toppings(ketchup, sauce, fresh herbs, etc.)
Directions:
Preheat oven to 375 degrees Fahrenheit. Take one half of avocado and scoop out a bigger hole with a spoon. Crack one egg in each avocado half, and season with salt, pepper, and cheese/tomatoes if desired. Pur in the oven and cook for 20-25 minutes, until eggs are firmly cooked. Transfer to a plate, add toppings like ketchup or sauce, and enjoy!
Note: My avocado was really small, so I only used one egg and ate both halves of the avocado. If your avocado is also too small, crack some of the white in one half, and the remaining white and yolk in the other. Bake as normal. Below is my avocado with only egg white in it, which turned out great! I topped it with mozzarella cheese, tomato sauce, and some fresh basil.
